Steel -Cut oatmeal cookies
Absolutely Delicious! Impossible to tell these are gluten-free with very low glycemic index!
3/4 cup butter
1 cup coconut sugar** (brown sugary flavor - lower glycemic load)
1/2 cup Xylitol (low glycemic index)
1 tsp baking powder (aluminum free)
1/4 tsp baking soda
1/4 tsp sea salt
1/4 tsp Xanthan Gum** (thickens - subs for lack of gluten)
2 tsp. ground cinnamon
1 3/4 cups Bob's Red Mill Gluten-free All-Purpose flour*
2 eggs (organic)
2 tsp pure vanilla extract
2 cups Steel-cut oats**
3/4 cup walnuts chopped
3/4 cup raisons (optional - high sugar content)
*Order Bob's Red Mill Gluten-free All-Purpose flour here. I have had great success with it in every recipe where I've substituted it for wheat flour. Just enter Bob's All Purpose Flour in the Search box located in the upper right of the catalog.
Preheat oven to 350 degrees.
With electric mixer cream butter with coconut sugar and xylitol
Add the eggs and vanilla and beat til well mixed.
Thoroughly mix together the rest of the dry ingredients (except hold the oatmeal, nuts and raisins until after all the other ingredients are mixed.)
Add the dry ingredients to the creamed mixture and mix well.
Add oats, nuts (and raisins if desired).
Drop by rounded teaspoons on ungreased cookie sheet.
Bake at 350 for 12 - 13 minutes or until the edges are brown and the tops are golden brown.
Let set in the pan for 1-2 minutes. Then lift gently with spatula and cool on wire rack.
Makes about 5 dozen (60 cookies).
