Sweet Potato Smoothie - Strawberry colada overtones
This tasty and healthy sweet potato smoothie resulted from left-overs: mashed sweet potatoes from Thanksgiving, strawberries and bananas that were soon going to spoil, pineapple that Tom opened, and left-over coconut milk that I stored in the freezer. The coconut milk dominates and blends with the strawberries for strawberry colada overtones.
Unfrozen canned coconut milk will work just as well, but to have a chilled smoothie, one of the other fruits needs to be frozen in place of the coconut milk.
Measurements are approximate. I didn't measure as I made it! So adjust to suit your taste, and let me know your results!
Mashed sweet potato - about 1/2 cup
Unsweetened canned pineapple slices - about 4 plus 1/4 cup+/- juice
1/2 ripe, soft banana
1/2 of a 16oz. pkj fresh Strawberries (8 oz.+-)
1/2 cup+/- frozen canned coconut milk
Combine in your blender and mix until smooth.
(This is a Step 3 smoothie - pineapple and banana are high in sugar!)
