Apple Nut Stuffed Acorn squash for Two
1 Acorn Squash
1/3 cup chopped walnuts or other nuts
1/2 green apple, peeled, cored and chopped
2 Tbs+/- Butter
8+ drops liquid Stevia
1/2 tsp +/- cinnamon
1/4 tsp +/- nutmeg
Slice squash in half and remove seeds.
Mix everything together (except the squash);
Scoop half the mixture into each squash half and sprinkle lightly with more cinnamon and nutmeg.
Bake at 400 degrees F for 45 to 50 minutes or until squash is knife tender and cuts almost as easily as butter. Delicious!
A delightful departure from potatoes and rice.
