Dairy-Free Strawberry Cream Cheese Pie
Festive enough for a holiday. Elegant enough for company. Beautiful Christmas colors.
1 gluten-free pie crust, baked
1 pint whole medium strawberries
1 cup whole any size strawberries (for simmering)
3/4 cup water
3 Tbs. cornstarch*
1/4 cup xylitol
1/8 tsp. stevia
8 oz. non-dairy cream cheese
*Xanthan Gum would be healthier, but I haven't tried that yet. (probably 1 tsp. or more depending on how the sauce thickens)
Bake and cool pie crust.
Simmer 1 cup fresh (or frozen) strawberries and 3/4 cup water. Combine cornstarch, xylitol and stevia before adding to simmering strawberries. Stir gently until color is clear (not cloudy).
Spread cream cheese on bottom of pie crust. Pour whole berries on top of cream cheese. Pour liquid mixture over the top. Refrigerate one hour or longer.
Serve. Mmmmm, Mmmmm Good!
Optional - Top individual slices with coconut milk whip cream.
