"scratch' Gluten-free pancakes and waffles
I adapted this delicious, spongy "scratch" gluten-free pancakes and waffles recipe from my whole wheat pancake recipe. Try it - It's easy. If you like waffles and pancakes you'll love these!
2 cups Red Mill Gluten-free All Purpose flour
2 Tbs. Flaxseed
1 Tbs. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Xanthan Gum*
2 Tbs. Coconut Sugar
1 Tbs. Xylitol
1 to 1 1/2 cups Buttermilk; or Lactose-free Milk or Unsweetened Almond Milk (soured with 1 Tbs. lemon juice per cup of milk)
2 Tbs. Coconut Oil
3 eggs beaten (Organic, Free Range or Vegetarian depending on your budget)
Blueberries if desired
*Xanthan gum is a thickening agent to help replace gluten. I also use an extra egg (the original recipe used 2 eggs).
**Sprinkle berries with a little xylitol. Smush strawberries slightly with a fork. Add about 1/4 inch of hot water and let sit at rooom temperature while you prepare your meal. The water will turn to juice! Use as a topping on gluten-free waffles. Yum!
Blend the dry ingredients in a medium to large bowl.
Whisk or beat the eggs, add coconut oil and 1 cup milk.
Blend liquid ingredients into dry. Add more milk if needed. Batter should not be runny or pasty! If you are not sure of the consistency, try grilling one pancake and add more milk if needed. (I soured Lactose-free cow's milk with lemon juice for this recipe, but soured almond milk should also work well - I believe the soured milk makes the pancakes spongy.)
Cook on a hot grill set to medium or bake in your waffle-maker. Top your gluten-free pancakes or waffles with butter or coconut oil if desired, and/or Fruit Syrup and/or fresh berries**. Coconut nectar (syrup) is also low-glycemic with a molasses-like taste.
For a delicious shortcake, top a couple of gluten-free waffle quarters with fresh berries and whipped coconut cream.
