Almost Sugar Free Blueberry Pie
Spring and summer are the perfect time for homemade blueberry pie. And this pie is almost sugar free, gluten free and sports a coconut and walnut topping instead of a top crust. Simple and delicious!

In a medium size bowl mix blueberries with all ingredients except the pie crust and the last 3 ingredients:). Let the mixture sit for 15 minutes so the thickener (Tapioca) can begin to do its job. Pile into the pie crust.
Dot the top of the berries with the butter. Then sprinkle with the chopped walnuts and finally with the coconut.
Place in a pre-heated 450 F. oven and bake for 15 minutes. (If your crust looks like it may burn, tear 2 - 3 inch wide strips of aluminum foil, remove the pie from the oven, cover the crust with the foil and place the pie back in the oven.)
Reduce the oven heat to 350 F. and bake for 40 - 45 minutes. Remove from the oven and allow to cool for 30- 60 minutes. Just as yummy chilled on a hot day!
