Bob's Red Mill All-Purpose Gluten-free flour is most of the secret. It seems to react just like wheat flour in the recipes where I've tried it. Xanthan Gum is a thickener and helps replace the gluten. I use it in most gluten-free recipes.
Please note, however, that gluten-free and natural sugar substitutes are not calorie free, and the pounds can add on as quickly as with recipes that us wheat and sugar!
