Seriously, these gluten-free, dairy-free buckwheat waffles are scrumptious. Buckwheat pancakes from this gluten-free recipe are equally good. I've made some more healthy substitutions from the original recipe plus folding in the eggwhites adds air, lightness and helps substitute for the missing gluten (as does the xanthan gum). Blueberries and flaxseed are that extra healthy touch plus coconut oil and almond milk.
